I've recently been given an ice cream maker. I combined a couple of different recipes to create this sorbet that's perfect for a hot summer day. Enjoy!
Ingredients:
1 cup plus 2 tbsp simple syrup
1 mango
a few handfuls of strawberries
1/4 cup fresh lemon juice
Simple syrup can be purchased, or you can make your own by mixing equal parts water and granulated sugar and simmering them in a saucepan until the sugar is dissolved. (If you start with 1 cup each water and sugar, you'll end up with a little more syrup than you need for this recipe.) Remove from heat and let cool to room temperature.
Next, make your fruit puree. Start by peeling, pitting, and dicing the mango. Then chop up strawberries until you have approximately 4 cups of fruit total. Puree the mango strawberry mixture using a food processor, immersion blender, or whatever method suits your fancy.
Mix together puree, simple syrup, and lemon juice until combined. Churn your mixture in your ice cream maker according to the manufacturer's instructions.
